curried tofu

i love tofu. i love curry. what could be better than both together?
at teri's request, here is the recipe!

Curried Tofu:

(serves 6! wow! that's a lot of food! i think this recipe could easily be halved if desired)

Ingredients:

-4 tsps vegetable oil
-2 packages of extra-firm tofu, drained and cubed
-salt and pepper to taste
-1 cup light coconut milk
-2 tsps curry powder
-2 cups carrots, julienne
-2 tsps crushed red pepper flakes (this makes it very very very SPICY, feel free to use less(or none!) if you don't want it to have some serious zing!)
-2 15-oz cans pineapple chunks in juice, drained
-2 medium red bell pepper, seeded, de-ribbed and cut into strips
-1 cup fresh basil, chopped

Directions:

In large skillet saute tofu in oil until lightly browned; remove from skillet and set aside. In the same skillet, add coconut milk and curry and cook for another minute or so, continuously stirring to prevent scorching. Add carrots, red pepper flakes, pineapple, bell pepper and basil. Continue stirring and cooking for another 5 minutes. Salt and pepper to taste, then return tofu to skillet and cook for another two to three minutes. Done!

I served this with whole wheat couscous (definitely necessary for me to cut the heat of this...i was feeling the burn!) but you can eat it alone or with rice or bread or however you choose!

as my husband said, 'it is tasty, but it makes your lips burn!'

i love me some spicy food...embrace the zantac! lol.

Not so much a receipe but...

It's a little tip.

My friend Ryan came over for dinner last night and we made tostadas. Very yummy. What made them particularly yummy was two things:
1. Peach salsa - we added a mild peach salsa to the refried beans and then a small dollap on top of the finished tostada. Very tasty.
2. Red bell peppers - we cut up (okay, Ryan did the actual cutting, and hey, did you know you're supposed to cut out the fiberous part, apparently you don't actually digest it) a pepper and added it on top of the tostada - gave it a little something sweet that made it extra yummy.

And then we ate pie with Bailey's Ice Cream on top... oh yeah, so much for starting to watch what I'm eating again this week.
