springtime for salsa!

ok... so i fried up some corn tortillas for big chips and since i am a fish eater added some of daddy's pan seared fresh salmon to the meal but you could eat this salsa any ways you wanted cause it's freakin awesome!!!!!

diced tomatoes (no juice!) out of the can or chopped fresh
an onion or two
a few mangoes
some fresh diced (deseeded) jalepenos
freh cilantro
fresh lime juice
some avocados
a few cans of corn and black beans (drained)

toss it all together in a bowl and let it sit for a while, it's OH SO YUMMY!!!!!!!!!!!!!!!!!!

oh, now i wish we had avocados! yummmmmmmyyyy!!!

believe me, when i get home i'll be making this! mmmm............mexican food......

actually, i might make this sans avocados because when summer gets here it's mango season again and YUM!

you definitely should! i'm so jealous of you living in a place with an actual mango season... all the experts say most of the mangoes we get in stores here don't even compare... so i hope you have some delicious melt in your mouth mango salsa!! (ps it's better the next day after it's had some time to marinate)
